Creamy Cauliflower "Mashed Potatoes"
If you're looking to dish up a tasty concoction this Thanksgiving that doesn't break the calorie bank, try out this macro-friendly, yet delicious take on a Thanksgiving favorite!
-2 12oz bags of riced cauliflower
-6 tbsp of whipped Greek cream cheese
-1/4 cup grated parmesan
-1/2 tsp garlic powder
-1/2 tsp sea salt
Microwave riced cauliflower until it's hot and steaming. Microwaving time will vary depending on if you are using frozen riced cauliflower or not. Place microwaved riced cauliflower in a food processor or blender and blend to further "puree." Add whipped Greek cream cheese, parmesan, garlic powder, and sea salt and stir to combine all ingredients. Place mixture into baking dish and sprinkle with additional parmesan. Bake at 350 degrees for approximately 12-15 minutes or until the top begins to brown ever so slightly. Remove from oven, cool, and enjoy!
