Turkey Pumpkin Chili
The beauty with this recipe (as with many others we feature here on the blog) is that it is 100% customizable based on your taste preferences and macros! I have made this with lean ground beef (in lieu of turkey), other kinds of beans, tomatoes, added in mushrooms, corn, green beans, etc. The SKY is the limit (assuming you are good on macros)! Ingredients:
336g 99% Lean Ground Turkey
120g Pumpkin (canned is ok, just make sure it’s pure pumpkin)
195g Chili Beans
155g Tomato Sauce
188g Diced Tomatoes
1 packet Chili mix (36g)
1 tsp minced garlic
Directions:
Measure each ingredient (and use numbers based on your macros—just try to keep similar ratios to keep consistency right). Use a large pot and soften the minced garlic in non-stick spray. Add the ground turkey and cook as directed. Add the remaining ingredients, stirring as you add. Bring to a boil then cover and simmer until cooked through. Stir as needed. Pour all contents onto a tared scale (zeroed with bowl on it, so you are getting the weight of all the ingredients only). Divide that number by 4 for your weight per serving. Yes, there will be slight variances with how many beans or how much sauce is in each serving, so just eyeball it! Don’t put all the beans or meat or sauce in one serving, divvy it up! Ex 923g/4 servings equal 231g per serving (rounded up).
